How to Pipe PERFECT Rainbow Cupcakes with PLASTIC WRAP!

Funfetti Cupcake Recipe
Makes 1 dozen cupcakes

INGREDIENTS
1/2 cup (1 stick) butter, room temperature
1 cup sugar
2 eggs, room temperature
1 tsp clear vanilla extract (can sub for regular vanilla extract)
1 1/2 cups flour
1 3/4 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/4 cup rainbow sprinkles

DIRECTIONS
1. Preheat oven to 350F
2. Cream together butter and sugar. Mix in eggs one at a time, then add in vanilla extract and stir to combine.
3. In a separate bowl, whisk together flour, baking powder, and salt. Add half the dry ingredients to the butter mixture and combine. Mix in the milk, and finish with remaining half of dry ingredients. Fold in sprinkles.
4. Divide batter evenly between 12 cupcake liners. Bake for 20-23 minutes or until a toothpick inserted in the center comes out clean.

Buttercream Recipe – makes a generous amount of frosting for 1 dozen cupcakes

INGREDIENTS
2 cups (4 sticks) butter, softened
5-6 cups powdered sugar
1 tsp vanilla extract
5-7 T milk
Gel food coloring in pink, red, orange, yellow, green, blue, and purple

DIRECTIONS
1. Cream together butter and sugar until light and fluffy. Mix in vanilla extract, and add enough milk to reach desired consistency.
2. Color about 1/2 cup of frosting for each color.
