Hellloooo there and welcome back!! Today we are making a delicious vanilla cake inspired by the movie “To All the Boys I’ve Loved Before” 😁😍 If you haven’t seen the film yet, you have to check it out! It’s an adorable movie, and I’m all for the Asian American representation in it too (YAY LANA CONDOR!!). Growing up, I never saw an Asian American female lead in a movie, so it was amazing to see that role fulfilled. With that and “Crazy Rich Asians,” it’s great to see Asians in the media!! So I knew I had to make a dessert inspired by “Too All the Boys I’ve Loved Before,” and I hope you like it too!

How to Make Mini Narwhal and Unicorn Cakes!

Hellloooo there and welcome back!! Today we are making TWO adorable mini cakes: a narwhal and a unicorn! So excited to be back filming more videos for y’all — leave any special requests down below! Enjoy!! 😁

Cake Mold – you can also use a cupcake pan and cut out rounds of cake using a circular cookie cutter!

Instructions
Vanilla Cake
  1. Preheat the oven to 350°F. Spray a silicone cake pan with cooking spray. Alternatively, line a cupcake pan with cupcake liners.
  2. In a large bowl, whisk together the cake flour, sugar, baking powder, baking soda, and salt. Add the cubed butter and mix with an electric mixer until the mixture resembles coarse sand (about 4 minutes).
  3. In a separate bowl, whisk together the vegetable oil, eggs, buttermilk, and vanilla. With the mixer on low speed, gradually add the wet ingredients and mix just until combined.
  4. Scoop out and color 3 tablespoons of batter for every desired color using the gel food coloring. Pour the batter into the cup of the cake pan or cupcake liner.
  5. Bake in the preheated oven for about 15 minutes, or until a toothpick inserted into the center comes out clean.
Buttercream Frosting
  1. In a large bowl, cream together the butter and powdered sugar until light and fluffy. Mix in the vanilla and milk, then whip on high speed for an additional 4 minutes.
  2. Color half of the frosting blue and leave the other half white.

Why use the reverse cream method for the cake?

The reverse cream method means each particle of flour gets coated with the butter which allows for a dense, moist cake that’s still super tender and fluffy!

Vanilla Cake Recipe

Ingredients

  • 3 cups cake flour
  • 2 cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ½ cup butter, room temperature, cut into 1/2 inch cubes
  • ½ cup oil
  • 4 eggs
  • 1 cup buttermilk
  • 4 tsp vanilla

Directions

  1. Preheat the oven to 350°F. Spray the bottom of a giant cupcake pan and 1.5 qt. bowl generously with cooking spray.
  2. In the bowl of an electric mixer, mix together the cake flour, sugar, baking powder, baking soda, and salt on low speed with the paddle attachment for 1 minute.
  3. Keeping the mixer on low speed, add the cubed butter and combine until the mixture resembles coarse sand (about 4 minutes).
  4. In a separate bowl, whisk together the oil, eggs, buttermilk, and vanilla. With the mixer on low speed, gradually add the wet ingredients and mix just until combined.
  5. Scoop 2 1/2 cups of batter into the bowl and place the remaining batter in the cupcake pan. Bake the bowl for about 35-40 minutes and the cupcake pan for about 60 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before decorating.

Buttercream Frosting Recipe

Ingredients

  • 1 ½ cups (3 sticks) unsalted butter
  • 4 ½ cups powdered sugar
  • 1 ½ teaspoon vanilla extract
  • 3-4 tablespoons milk
  • Gel food color in pink, blue, and purple.

Directions

  1. Cream together the butter and sugar until light and fluffy, about 5 minutes. Mix in the vanilla and milk until combined.
  2. Use the frosting to frost the outside of the top of the cupcake and to “glue” the bottom portion of cake into the wrapper. Then after assembling the cake, divide the remaining frosting between three bowls and color one of each pink, blue, and purple. Use this frosting to pipe on the mane.

  • Mini cupcakes, frosting, and sprinkles for mini Pikmi Pops cupcakes
  • Candy melts in black, white, red, and pink
  • Jumbo marshmallow
  • Black licorice
  • One sugar cone
