Ingredients
Vanilla Cake
- 1 1/2 cups cake flour
- 1 cup sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup butter room temperature, cut into 1/2 inch cubes
- 1/4 cup vegetable oil
- 2 large eggs
- 1/2 cup buttermilk easy substitute: combine 1 1/2 tsp white vinegar + 1/2 cup regular milk, stir, then let stand for 5 min before using
- 2 tsp vanilla
- Gel food color in desired colors
Buttercream Frosting
- 1/2 cup butter
- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract
- 1 T milk
- Blue gel food color

Instructions
Vanilla Cake
- Preheat the oven to 350Β°F. Spray a silicone cake pan with cooking spray. Alternatively, line a cupcake pan with cupcake liners.
- In a large bowl, whisk together the cake flour, sugar, baking powder, baking soda, and salt. Add the cubed butter and mix with an electric mixer until the mixture resembles coarse sand (about 4 minutes).
- In a separate bowl, whisk together the vegetable oil, eggs, buttermilk, and vanilla. With the mixer on low speed, gradually add the wet ingredients and mix just until combined.
- Scoop out and color 3 tablespoons of batter for every desired color using the gel food coloring. Pour the batter into the cup of the cake pan or cupcake liner.
- Bake in the preheated oven for about 15 minutes, or until a toothpick inserted into the center comes out clean.
Buttercream Frosting
- In a large bowl, cream together the butter and powdered sugar until light and fluffy. Mix in the vanilla and milk, then whip on high speed for an additional 4 minutes.
- Color half of the frosting blue and leave the other half white.
