How to Make Mini No-Bake Galaxy Cheesecakes!

Big thanks to Disney for sponsoring this post!

Helloooo there and welcome back!! 😄 Today we are making some Mini No-Bake Galaxy Cheesecakes inspired by Disney’s A Wrinkle In Time! I absolutely loved the movie, and was especially inspired by the science aspects in it. Since the characters travel throughout the universe in their adventure, I thought these galaxy cheesecakes would be the perfect treat to enjoy while you watch the movie! 😊 Enjoy!!

Ingredients

  • 6 full sheets of graham crackers
  • 4 tablespoons melted butter
  • 1/2 cup sugar
  • 1 package of gelatin (about 2 1/4 teaspoons)
  • 1 cup boiling hot water
  • 2 (8 oz) packages of softened cream cheese (very important that it’s room temp! Otherwise you’ll get lumps in your cheesecakes)
  • 1 teaspoon vanilla extract
  • Food color in blue, turquoise, purple, and white
  • Optional: White and chocolate candy melts
  • Optional: Galaxy sprinkles

Directions

  1. In a food processor, pulse the graham crackers until finely ground. Pour over the butter and continue pulsing until combined (mixture should look like wet sand). Scoop about 1 tablespoon of the crust into each cavity of a mini cheesecake pan and press down with your fingers or a smalll glass. Set aside.
  2. In a medium bowl, mix together the white sugar and gelatin until combined. Pour in the boiling hot water and stir until the sugar and gelatin are completely dissolved. Set aside.
  3. In a large bowl with an electric mixer, beat the cream cheese until completely smooth. Mix in the vanilla extract, then slowly add in the gelatin mixture. Only add about 1/4 – 1/3 cup at a time to prevent lumps. Divide the cheesecake mixture between four bowls and color one of each dark blue, turquoise, light blue, and purple.
  4. Dollop the cheesecake mixture over the cheesecake crust, making sure to alternate colors. Swirl the mixture together using a toothpick.
  5. For stars, mix together 1 drop of white food color with 1/4 teaspoon of water. Using a food-safe paintbrush, splatter the mixture over the cheesecakes to create stars. Refrigerate the cheesecakes for 2-3 hours or until completely set.
  6. Meanwhile, spoon melted white candy melts into a star mold and let set completely. Remove from the mold and add kawaii faces using the chocolate candy melts and a toothpick if desired.
  7. Gently remove the cheesecakes from the pan and remove the removable bottom. Transfer to a serving plate. Refrigerate until served.
  8. To decorate, place the stars on top of the cheesecakes along with galaxy sprinkles just before serving.

How to Make Pusheen Edible Cookie Dough + Brownie Filled Chocolates!

Helllooo there and welcome back!! Today we are making some adorable Pusheen chocolates filled with edible cookie dough and brownies WHAT ❤ Hope you enjoy the video!! And wish your girl luck for Spring Quarter ahhh!! Really looking forward to summer so I get back to weekly videos, but know that I’m doing my best over here to keep up with school and KSW! Hugs!! ❤❤

I have some bad news — the seller I got my Pusheen mold from on Amazon no longer sells the mold!! AHH 😱😱 I’m so sorry!!! But since the technique and recipe works for any mold, I still wanted to post the video. If you’re reading this later on, try searching for “Pusheen Mold” on Amazon to see if it’s back in stock. Otherwise, here’s some other equally kawaii molds that would work just as well for this project!!

Edible Cookie Dough Recipe

  • 1/2 cup flour
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup butter, softened
  • 3 T sugar
  • 3 T brown sugar
  • 1/2 tsp vanilla extract
  • 1 T milk
  • 1/4 cup mini chocolate chips

Directions

  1. To heat treat the flour (i.e. Make it safe for consumption):
  2. Place the flour in a microwave safe bowl, then microwave at 30 second intervals, whisking after each interval to break up clumps. Continue until flour reaches 160 F. This should take about 60-90 seconds total.
  3. Alternatively, sprinkle the flour over a parchment paper lined baking sheet and toast at 350 F for 10 minutes.
Let the flour cool before continuing.
  4. Whisk together the flour, baking soda, and salt to combine.
  5. In a separate bowl, combine butter, sugar, and brown sugar. Mix in vanilla extract and milk.
  6. Add dry ingredients and mix until only streaks of flour remain. Add in desired mix-ins, and mix until fully combined.

Last Minute Edible Holiday Gifts!

Hellloooo friends!!! Today we are making last minute edible holiday gifts that people actually want (per the YouTube trend these days 😉 ) (side note: I think it’s hilarious that it’s a trend now — as if all this time, we were all just making garbage that nobody really wants hahaha). But these aren’t just any old taken straight from Pinterest desserts — I’ve amped up the regular cake mix cookies with kawaii decorations and done lots of testing with the donuts to find the perfect mix/ratio/combination of ingredients! 😀 No one will know you really made them from a box! Unless they watch KSW too in which case, you’re out of luck. But tell them I say hi then!! Anywho, I am getting carried away writing this blog post. Hope you enjoy the video, and if you recreate any of these desserts, let your girl know with the #kawaiisweetworld so I can see/like/comment/shower you with love and compliments!!

Cake Mix Cookies

Ingredients

  • 1 (18.25 oz.) box of cake mix, any flavor
  • 1/2 cup canola oil
  • 2 eggs (preferably room temp, but it matters less for this recipe)
  • 1/4 cup sprinkles/mix-ins

Directions

  1. Preheat oven to 350 F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together cake mix, canola oil, and eggs until combined. You might see a few  clumps of dry cake mix — just do your best to work these out by pressing them against the side of the bowl with your spatula. But if some lumps remain, it won’t make a big difference.
  3. Add in mix-ins and fold to combine.
  4. Dollop cookie dough onto prepared baking sheet and bake for 12 minutes or until the bottom edges of the cookie are golden brown. The cookie will still seem soft in the center once you take them out of the oven, but let them crisp on the baking sheet for 3-4 minutes and they’ll firm up more. Transfer to a wire rack to cool completely.

Royal Icing

Ingredients

  • 2 cups powdered sugar
  • 4 1/2 tsp meringue powder
  • 2-3 T water
  • Gel food color

Directions

  1. Whisk together powdered sugar and meringue powder until combined. Add in water and mix with an electric mixer for 6-7 minutes or until stiff peaks form. Color with food color as desired.

Cake Mix Donuts

Ingredients

  • 1 (18.25) box cake mix, any flavor
  • 2 eggs (preferably room temp, but if matters less for this recipe)
  • 1/2 cup melted butter
  • 1/2 cup milk

Directions

  1. Preheat electric donut maker, or preheat oven to 350 F if using a donut pan or mini muffin tin.
  2. Mix together cake mix, eggs, melted butter, and milk until combined. For easier filling, transfer mixture to a piping bag.
  3. Pipe batter into electric donut maker and let bake for 3-4 minutes or until a toothpick inserted into donut comes out clean. Transfer to a wire rack to cool completely.
  4. Alternatively, pipe donut batter into a donut pan and bake for 10-12 minutes or until a toothpick inserted into donut comes out clean.
  5. Alternative to the alternative, scoop batter into a greased or cupcake wrapper-lined mini muffin tin and bake for 12-13 minutes or until a toothpick inserted into the center comes out clean.

Chocolate Ganache

Ingredients

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy whipping cream

Directions

  1. Place semisweet chocolate chips into a heatproof bowl and set aside.
  2. Heat heavy whipping cream in the microwave or on a stovetop pot until it starts to simmer. Pour over chocolate chips and let sit for 5 minutes.
  3. Stir chocolate ganache until smooth.
