A funfetti birthday cake inspired by Momofuku Milk Bar that’s perfect for any celebration!
Funfetti Cake Ingredients
Makes one 9″ x 13″ sheet cake
INGREDIENTS
4 T softened butter
1/3 cup vegetable shortening
1 1/4 cups white sugar
3 T brown sugar
3 eggs
1/2 cup buttermilk
1/3 cup canola oil
2 tsp clear vanilla extract
2 cups cake flour
1 1/2 tsp baking powder
3/4 tsp salt
1/4 cup + 2 T sprinkles
DIRECTIONS
1. Preheat oven to 350F
2. Cream together butter, shortening, and sugars in bowl of stand mixer with paddle attachment for 2-3 minutes at medium-high. Add eggs and continue beating at medium-high speed for 2-3 minutes.
3. On low speed, stream in buttermilk, oil, and vanilla. Increase speed to medium-high and whip for 4-6 minutes until mixture is pale and thick. Add cake flour, baking powder, salt, and 1/4 cup sprinkles. Mix until just combined.
4. Pour into greased 9″ x 13″ baking sheet, and top with additional 2 T sprinkles. Bake for 30-35 minutes or until toothpick inserted in center comes out clean, then cool for 10 minutes before turning out onto cooling rack or cutting board.
Funfetti Crumb Recipe
INGREDIENTS
1/2 cup white sugar
1 1/2 T brown sugar
3/4 cups cake flour
1/2 tsp baking powder
1/2 tsp salt
2 T sprinkles
1/4 cup canola oil
1 T clear vanilla extract
DIRECTIONS
1. Combine sugars, flour, baking powder, salt, and sprinkles in bowl of stand mixer fitted with paddle attachment. Add oil and vanilla, and mix until coarse crumbs form. Spread onto baking sheet lined with parchment paper, and bake for 20 min at 350F.
Birthday Cake Frosting Recipe
INGREDIENTS
8 T (1 stick) softened butter
1/4 cup vegetable shortening
2 oz cream cheese
2 T light corn syrup
1 T clear vanilla extract
1 1/4 cups powdered sugar
1/2 tsp salt
Pinch of baking powder
DIRECTIONS
1. Combine butter, vegetable shortening, and cream cheese in bowl of stand mixer fitted with paddle attachment. Beat for 2-3 minutes at medium-high speed until fluffy.
2. On low speed, stream in corn syrup and vanilla extract. Beat for 2-3 at medium-high speed.
3. Add powdered sugar, salt, and baking powder. Beat for final 2-3 at medium-high speed.
