How to Make Mermaid Donuts

There’s no need to go “Under the Sea” to find awesome donuts!! Pretend that was funny and clever ? But seriously, these donuts are a beautiful addition to any summer party and they taste as good as they look! Super moist with nice vanilla flavor and tender crumb – enjoy!

  1. Preheat oven to 350 F and grease donut pan with cooking spray.
  2. Cream together butter and sugar until light and fluffy. Mix in eggs, one at at time, until combined. Beat in vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Add half of dry ingredients to wet and mix to combine. Pour in milk, then continue mixing. Fold in remaining dry ingredients by hand.
  5. Divide batter between three bowls and color as follows: teal, light blue, and purple.
  6. Load batter into a piping bag or Ziploc bag using technique shown in video, or just spoon in the different colors. Pipe batter into donut mold and bake for 15-17 minutes.
Donut Glaze
  1. Mix together powdered sugar and milk until glaze is thick but stir-able. I recommend test-dipping one donut first to see if it drips off the sides too much before dipping all donuts! It can be tricky to judge consistency just by eye.

  1. Preheat oven to 350 degrees F. Grease cake pan with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and sugar. Mix in eggs, beating after each addition. Add in vanilla and combine. Alternate adding dry ingredients and milk, beginning and ending with the dry.
  4. Divide the batter between the cake pan wells, then bake for 25 min.
Buttercream Frosting
  1. Cream together butter and powdered sugar until light and fluffy, then mix in vanilla. Add milk to reach desired consistency. Color with gel food color.

Totoro Buche de Noel

This Totoro Buche de Noel is a super fun take on the classic yule log!

Also, about that chocolate ganache I mentioned in the video – I didn’t have any heavy whipping cream on hand to make a real ganache, so I substituted milk and added a little butter to replace the fat. However, the ganache hardened when on the cake into a more “bark” like texture, which was super realistic but also not super fun to eat ? So I just opted to replace the ganache bark with Nutella and it worked out great! ? ~The End~

  1. Preheat oven to 350F. Grease a 15" x 10" baking pan and line with parchment paper. Grease once again with cooking spray.
  2. Beat eggs with electric mixer for about 5 minutes or until thick and pale and fluffy. Gradually mix in sugar until combined, then mix in water and vanilla.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients, then pour into prepared baking pan.
  4. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean. Immediately run a knife around the edge of the pan to loosen, then flip out onto a clean kitchen towel. While cake is still warm, roll up cake in towel.
  5. When cake is cooled, unroll cake and spread on buttercream frosting. Re-roll cake, then slice off ends to reveal clean finish. Cut off a small section of cake at the end at a diagonal of the yule log for a branch end. Place branch end on side of cake, then frost cake with slightly warmed/softened Nutella. Decorate with Totoro fondant figurines and sprinkles.
