New Years Eve Party Desserts and DIYs

 

Mini Cinnamon Rolls
Makes 28 mini cinnamon rolls

Ingredients

  • Rolls
    • 2 cans Pillsbury Crescent Roll Dough Sheets
    • 1/3 cup brown sugar
    • 1 tsp cinnamon
    • 1/4 cup softened butter
  • Icing
    • 1 cup powdered sugar
    • 1-2 T milk

Directions

  1. Preheat oven to 375 F. Grease a mini muffin tin with cooking spray and set aside
  2. Combine brown sugar and cinnamon in a small bowl. Set aside.
  3. Roll out dough sheet, then spread on 2 T softened butter. Sprinkle about half of cinnamon sugar mixture on top, then roll up dough sheet longways. Cut about 14 rolls from the log, then place in muffin tin. Bake for 10-13 minutes until golden brown
  4. For icing, combine powdered sugar and milk. Drizzle over cooled cinnamon rolls and top with sprinkles if desired.

Puppy Chow
Definitely makes enough puppy chow for everyone at your party (but in a more quantifiable sense, it makes about 9-10 cups depending on how many mix-ins you add)

Ingredients

  • 9 cups Chex cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup softened butter
  • 1 1/2 cups powdered sugar
  • 1/2 – 3/4 cups lightly salted peanuts
  • 1 cup crushed pretzels

Directions

  1. Measure out cereal into a large bowl, then set aside.
  2. Melt together chocolate chips, peanut butter, and butter in a microwave safe bowl. Pour over Chex cereal, then toss to coat. Pour over powdered sugar, then continue tossing to coat.
  3. Mix in lightly salted peanuts and pretzels (or desired mix-ins) and serve.

Peanut Butter Cup Cookies

Makes about 26 cookies

Ingredients

  • 1 3/4 cups flour
  • 1/2 tsp salt
  • 1 tsp  baking soda
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 2 T milk
  • 30 unwrapped peanut butter cups
  • Melted white chocolate and sprinkles to decorate if desired

Directions

  1. Preheat oven to 375 F. Grease a mini muffin tin with cooking spray and set aside. Be sure to unwrap peanut butter cups before baking cookies.
  2. Whisk together flour, baking powder, and salt. Set aside.
  3. Cream together butter, white sugar, brown sugar, and peanut butter until light and fluffy. Add in beaten egg, vanilla, and milk, and mix to combine. Mix in the flour until just combined, then scoop out 1.25″ balls of cookie dough and place in greased muffin tin. The dough should fill the tin about 3/4 of the way. Bake for 10-11 minutes – the cookies will appear underdone, but they will continue baking as they cool in the pan.
  4. Immediately after cookies come out of oven, place a peanut butter cup in the center of each cookie. Allow chocolate to melt slightly, then add sprinkles. Let cool completely and remove cookies from pan with an offset spatula. Top with clock decoration using white chocolate if desired.
