Viral Trends of 2016 Cake

Donut Cone

Ingredients

  • Sugar Ice Cream Cones (You should be able to re-use the cones for ice cream if you don’t break them!)
  • Crescent Roll Dough Sheets
  • 4 T melted butter
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • Melted chocolate and sprinkles (optional)

Directions

  1. Wrap the sugar cones in foil, then grease with cooking spray. Cut crescent roll dough into 3/4″ strips, then roll into snakes. Wrap dough around greased sugar cone, pinching the end into the cone. Bake at 350 F for 18 minutes or until golden brown.
  2. Combine sugar and cinnamon. Brush cones with melted butter once they come out of the oven, then sprinkle cones with cinnamon sugar. Dip in melted chocolate and add sprinkles. If you plan to put ice cream in the cones, you may also coat the inside of the cone with Nutella or chocolate to increase the longevity of the cone.

Cookie Shot

*Don’t tell anyone, but I used store-bought cookie dough in the video to save time. I know, I’m a monster but I had to make 7 desserts for this video! Please forgive me ? Regardless, I typed up my favorite chocolate chip cookie recipe below. Enjoy!

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 whole egg + 1 egg yolk
  • 1 cup semisweet chocolate chips or chunks
  • This cookie cup mold

Directions

  1. Whisk together flour, baking soda, and salt. Set aside.
  2. In a separate bowl, mix together the melted butter, brown sugar, and regular sugar. Add in the vanilla extract and eggs and combine. Add the dry ingredients to the butter mixture and mix in, then fold in the chocolate chips.

Rainbow Donuts

*You can also use pound cake mix to speed this up!

Ingredients

  • 1 cup (2 sticks) butter
  • 1 cup sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 3 cups flour
  • 5 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • Gel food color in purple, pink, teal, yellow, and orange
  • Donut pan

Directions

  1. Preheat oven to 350F and grease your donut pan.
  2. Cream together butter and sugar. Add eggs one at a time, mixing after each addition. Mix in vanilla.
  3. Whisk together flour, baking powder, and salt. Alternate adding dry mixture and milk to egg mixture, starting and ending with the dry mixture
  4.  Divide batter into 6 different cups, then dye the five different colors. Place batter into separate Ziploc bags and pipe out strips of batter onto plastic wrap. Fold plastic wrap in half and twist ends, then place into a pastry bag fitted with a round tip and snip the end of the plastic wrap. Pipe batter into donut mold and bake for about 15 minutes or until a toothpick inserted into the center comes out clean.
  5. Let donuts cool and cut off bottoms to create a flat surface, then fill with buttercream frosting – recipe below.

California Donuts

Makes about 2 dozen mini donuts

Ingredients

  • 1/2 cup (1 stick) butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • Mini donut maker or pan
  • Melted white chocolate
  • Cereal or decorations of choice

Directions

  1. Preheat oven to 350F and grease your donut pan.
  2. Cream together butter and sugar. Add eggs one at a time, mixing after each addition. Mix in vanilla.
  3. Whisk together flour, baking powder, and salt. Alternate adding dry mixture and milk to egg mixture, starting and ending with the dry mixture
  4.  Pour batter into a pastry bag or Ziploc bag and pipe into a donut mold or donut maker. If using a donut maker, bake for appx. 3 minutes. Dip donuts in melted chocolate and sprinkle over cereal.

Galaxy Bark

Ingredients

  • Melted semisweet or dark chocolate (I used about 1 cup in melted chocolate in the video)
  • Candy melts or colored white chocolate in pink, blue, and purple.
  • Galaxy sprinkles

Directions

  1. Pour melted chocolate over a waxed paper lined baking sheet. Spoon over dollops of colored candy melts/white chocolate, then swirl with a popsicle stick.
  2. Sprinkle over galaxy sprinkles and refrigerate for 15 minutes to let set. Break into pieces and use.

Mirror Glaze

Ingredients

  • 2 packets of gelatin (5 tsp) + ½ cup water
  • 2 cups white chocolate chips
  • 1 ½ cups white sugar
  • 2/3 cups sweetened condensed milk
  • ½ cup water
  • Pink and white gel food color

Directions

  1. Mix together gelatin and ½ cup water and leave to bloom (about 5 minutes – mixture will thicken and become solid). Place chocolate chips in a large heatproof bowl and set aside.
  2. In a medium saucepan, place sugar, sweetened condensed milk, and the remaining ½ cup water. Bring to a simmer (just so it’s warm enough to dissolve the sugar and melt the gelatin), then add in bloomed gelatin. Stir until smooth.
  3. Pour mixture over the chocolate chips and let set for 3 minutes. Stir gently until smooth.
  4. Measure out ½ cup mirror glaze into a spouted container and color white. Pour pink mirror glaze into white and fill to 2 cup mark. Swirl with a popsicle stick for a more marbled effect.
  5. Before pouring over cake, ensure that glaze is body temperature (i.e. when you feel the sides of the container, it shouldn’t feel too warm or cold because it’s the same temp as your fingers). Pour glaze over cake and enjoy!

P.S. About that mirror glaze in the video – I accidentally forgot to add the gelatin into the mirror glaze the first time I made this, so needless to say it was a rather brief mirror glaze attempt that quickly ran off the cake. So I scraped it off and presto – the second coat is the one you see in the video 😀

Vanilla Cake Recipe

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 cup milk
  • 2 1/2 cups flour
  • 2 1/4 tsp baking powder
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 350F. Grease three 8″ pans with cooking spray and line with parchment paper, then lightly spray pans again.
  2. Mix together eggs and sugar until thick and fluffy – about one minute. Add in remaining ingredients and mix to combine. Pour into prepared pan and bake for about 35 minutes. Let cool before removing from pan and carving.

Buttercream Frosting Recipe

Ingredients

  • 3 cups confectioners’ sugar
  • 1 cup butter
  • 1 tsp vanilla extract
  • 1-2 T milk

Directions

    1. Cream together butter and sugar until light and fluffy, then mix in vanilla extract and milk.
