Éclair Recipe
Makes about 12-14 medium eclairs
INGREDIENTS
½ cup milk
½ cup water
½ cup (1 stick) butter, cut into cubes
¼ tsp salt
¼ tsp sugar
1 cup flour
4 eggs
DIRECTIONS
1. Preheat oven to 350F.
2. Place water, milk, butter, salt, and sugar in a medium saucepot. Bring to a boil, then remove from heat. Stir in flour until a ball forms. Return to heat for 2-3 minutes, and then transfer to stand mixer.
3. Mix dough for 30 seconds to cool. Add in eggs one at a time until batter is smooth and sticky.
4. Transfer dough to piping bag fitted with a large French tip and pipe out 3” eclairs. Bake for 40 minutes or until golden brown. Do not underbake!
Éclair Filling Recipe
INGREDIENTS
2 (3.4 oz.) packages instant vanilla pudding mix
1 cup milk
2 cups heavy whipping cream
DIRECTIONS
Stir ingredients together until smooth. Refrigerate for at least 15 minutes or until set.
