How to Make Mini Kawaii Animal Macarons!

Helllooo there! Hope you’re doing well!! 😊 Today we are making some MINI kawaii animal macarons because everything is cuter when it’s tiny 😝 Side note: these are also great for dieting! Yay portion control!! Enjoy!

Macarons
  1. Line a baking sheet with parchment paper.
  2. Beat egg whites until foamy, then gradually mix in sugar. Beat for about 6 minutes, or until stiff peaks form
  3. Into a separate bowl, sift together powdered sugar and almond flour. Whisk to combine, then toss into egg white mixture and fold just to combine. Note: Don't try to achieve the perfect macaron batter consistency here if you're going to color your batter! This is because you'll need to keep mixing once you add in the food color.
  4. Scoop desired portion of batter into a separate bowl and color with gel food color. Mix until batter runs off of spatula slowly but continuously. Transfer batter to a piping bag or Ziploc bag.
  5. Pipe batter onto prepared baking sheet into desired shapes. Preheat oven to 300 F.
  6. For mini macarons, let rest for 15-20 minutes or until you can lightly tap the macaron and your finger doesn't stick. For full-size 1" macarons, let rest for 20-30 minutes.
  7. Bake in preheated oven for 10-12 minutes. Macarons should come off baking sheet cleanly.
Buttercream Frosting
  1. Cream together butter and powdered sugar, then mix in vanilla.

Q: How did you get involved with She’s the First?

A: Tammy Tibbetts, the wonderful/kind/amazing/inspiring and co-founder/CEO of She’s the First reached out to me last year about getting involved with their #BakeAChange campaign, and after learning more about it, I said “YES ABSOLUTELY!” 😀 I love how She’s the First combines lots of causes that matter to me — gender inequality, education, and assistance for low-income countries.

As I mentioned in the video, education is a huge part of my own life. I was super shy growing up, and succeeding in school largely helped foster my confidence. The same effect can help girls in low-income countries, where access to education is far more difficult than in the US. It’s not just about learning math, science, and reading — even though those topics are important. But beyond the subject matter, education gives girls the confidence inside the classroom to lead outside in their own communities. I highly encourage you to check out the She’s the First website and learn more about the incredible work they do!!

Giant Tie-Dye Cupcake
Instructions
  1. Preheat oven to 350F. Grease a giant cupcake pan with cooking spray.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Mix in eggs one a time, beating after each addition.
  4. Add half of dry ingredients to butter mixture and mix to combine. Pour in milk and continue mixing. Finally, add in the rest of the dry ingredients and fold together.
  5. Divide batter between six separate bowls and color pink, orange, yellow, green, blue, and purple. Dollop batter 1 T at at time into cupcake mold. You'll want to add more batter into the cupcake base mold than the cupcake top.
  6. Bake cupcake top for about 50 minutes, and the base for 60 minutes.

Pusheen Brownie Pops

Hellooooo friends!! ? Today we are making some super tasty and adorable Pusheen brownie pop perfect for any cat-lover ? LOVE these as a substitute for cake pops too — you save lots of time since you don’t have to individually form each pop! YAY!

Chocolate Brownies
  1. Preheat oven to 350F.
  2. In a large microwave safe bowl, melt together butter and chocolate chips at 30 second intervals. Make sure to stir in between each interval.
  3. Add white sugar, vanilla, and salt to butter mixture. Stir to combine, then mix in eggs one at a time.
  4. Fold in flour and mix until just combined. Fill greased brownie pop mold with batter all the way to the tops of the mold and bake for 30 minutes or until a toothpick in the center comes out clean.
Royal Icing
  1. Whisk together meringue powder and powdered sugar until combined. Add in water 1 T at a time, beating with an electric mixer after each addition. Mix in black gel food color to achieve a dark gray. I found to get the perfect warm gray for Pusheen, it also helps to add in 1 drop of brown gel food color if you have it on hand.
