How to Make Mini No-Bake Galaxy Cheesecakes!

Helloooo there and welcome back!! 😄 Today we are making some Mini No-Bake Galaxy Cheesecakes inspired by Disney’s A Wrinkle In Time! I absolutely loved the movie, and was especially inspired by the science aspects in it. Since the characters travel throughout the universe in their adventure, I thought these galaxy cheesecakes would be the perfect treat to enjoy while you watch the movie! 😊 Enjoy!!

Ingredients

  • 6 full sheets of graham crackers
  • 4 tablespoons melted butter
  • 1/2 cup sugar
  • 1 package of gelatin (about 2 1/4 teaspoons)
  • 1 cup boiling hot water
  • 2 (8 oz) packages of softened cream cheese (very important that it’s room temp! Otherwise you’ll get lumps in your cheesecakes)
  • 1 teaspoon vanilla extract
  • Food color in blue, turquoise, purple, and white
  • Optional: White and chocolate candy melts
  • Optional: Galaxy sprinkles

Directions

  1. In a food processor, pulse the graham crackers until finely ground. Pour over the butter and continue pulsing until combined (mixture should look like wet sand). Scoop about 1 tablespoon of the crust into each cavity of a mini cheesecake pan and press down with your fingers or a smalll glass. Set aside.
  2. In a medium bowl, mix together the white sugar and gelatin until combined. Pour in the boiling hot water and stir until the sugar and gelatin are completely dissolved. Set aside.
  3. In a large bowl with an electric mixer, beat the cream cheese until completely smooth. Mix in the vanilla extract, then slowly add in the gelatin mixture. Only add about 1/4 – 1/3 cup at a time to prevent lumps. Divide the cheesecake mixture between four bowls and color one of each dark blue, turquoise, light blue, and purple.
  4. Dollop the cheesecake mixture over the cheesecake crust, making sure to alternate colors. Swirl the mixture together using a toothpick.
  5. For stars, mix together 1 drop of white food color with 1/4 teaspoon of water. Using a food-safe paintbrush, splatter the mixture over the cheesecakes to create stars. Refrigerate the cheesecakes for 2-3 hours or until completely set.
  6. Meanwhile, spoon melted white candy melts into a star mold and let set completely. Remove from the mold and add kawaii faces using the chocolate candy melts and a toothpick if desired.
  7. Gently remove the cheesecakes from the pan and remove the removable bottom. Transfer to a serving plate. Refrigerate until served.
  8. To decorate, place the stars on top of the cheesecakes along with galaxy sprinkles just before serving.

How to Make Gudetama Cake Pops!

Hellooo friends and welcome back!! Today we are making some adorable Gudetama cake pops perfect for anyone who’s a fan of this endearing lazy egg 😄🍳 Hope you enjoy the video!! Wish me luck on finals ahhhh — looking forward to this summer so I can film some more videos for you all!!

Ingredients

  • Half of a 9″ x 13″ cake
  • 1/4 cup – 1/3 cup frosting
  • Candy melts in white, yellow, and chocolate
    • I like to use Candiquik and color it myself using oil-based food color! I find that the consistency of Candiquik is the perfect consistency for cake pops right out of the package (i.e no need to add canola oil, coconut oil, paramount crystals, etc. to thin it out).
  • Red and pink Starburst
  • Peanuts
  • Slivered almonds

Directions

  1. Shape half the cake pop dough into ovals for Gudetamas that are lying down, and the other half into half-dome shapes.
  2. To add arms to the sitting Gudetamas, dip slivered almonds into the yellow candy coating and stick them into the sides of the cake ball. Alternatively, stick the slivered almonds onto the front of the cake ball for arms that rest on top of his belly.
  3. To add arms to the lying down Gudetamas, dip the peanuts into the yellow candy coating and stick them underneath the oval so it looks like his arms are outstretched in front of him.
  4. Dip lollipop sticks 1/2″ into the yellow candy coating and stick into each cake ball. Let set completely.
  5. Dip the cake pops into yellow candy coating and gently tap your wrist to remove the excess. Place on parchment paper to set completely.
  6. Add Gudetama’s face with the white and chocolate candy melts and a toothpick.
  7. Dollop white candy melts onto a sheet of parchment paper and spread out slightly to form an egg white blob. Stick a Gudetama cake pop in the center and let set completely.
  8. For bacon strips, stretch the red Starburst out into a rectangle (you may have to microwave the Starburst for 4-5 seconds to soften it first). Lay strips of pink Starburst on top for “bacon fat,” then press into the red.
  9. Place bacon strips on top of the Gudetamas. If desired, use more yellow candy melts to add arms over the blanket.

Why use the reverse cream method for the cake?

The reverse cream method means each particle of flour gets coated with the butter which allows for a dense, moist cake that’s still super tender and fluffy!

Vanilla Cake Recipe

Ingredients

  • 3 cups cake flour
  • 2 cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ½ cup butter, room temperature, cut into 1/2 inch cubes
  • ½ cup oil
  • 4 eggs
  • 1 cup buttermilk
  • 4 tsp vanilla

Directions

  1. Preheat the oven to 350°F. Spray the bottom of a giant cupcake pan and 1.5 qt. bowl generously with cooking spray.
  2. In the bowl of an electric mixer, mix together the cake flour, sugar, baking powder, baking soda, and salt on low speed with the paddle attachment for 1 minute.
  3. Keeping the mixer on low speed, add the cubed butter and combine until the mixture resembles coarse sand (about 4 minutes).
  4. In a separate bowl, whisk together the oil, eggs, buttermilk, and vanilla. With the mixer on low speed, gradually add the wet ingredients and mix just until combined.
  5. Scoop 2 1/2 cups of batter into the bowl and place the remaining batter in the cupcake pan. Bake the bowl for about 35-40 minutes and the cupcake pan for about 60 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before decorating.

Buttercream Frosting Recipe

Ingredients

  • 1 ½ cups (3 sticks) unsalted butter
  • 4 ½ cups powdered sugar
  • 1 ½ teaspoon vanilla extract
  • 3-4 tablespoons milk
  • Gel food color in pink, blue, and purple.

Directions

  1. Cream together the butter and sugar until light and fluffy, about 5 minutes. Mix in the vanilla and milk until combined.
  2. Use the frosting to frost the outside of the top of the cupcake and to “glue” the bottom portion of cake into the wrapper. Then after assembling the cake, divide the remaining frosting between three bowls and color one of each pink, blue, and purple. Use this frosting to pipe on the mane.
