Mermaid Macarons

Macaron Recipe

Makes about 20 macaron sandwiches

Ingredients

  • 3 egg whites
  • 1/4 cup sugar
  • 2 cups powdered sugar
  • 1 cup almond flour
  • Purple gel food color

Directions

  1. Beat egg whites until foamy. Slowly add in sugar, then mix for 6-8 minutes or until stiff peaks form.
  2. In a separate bowl, sift together almond flour and powdered sugar. Whisk to combine.
  3. Add half of dry ingredients to wet ingredients and fold in until halfway combined. Add in remaining dry ingredients, then fold until batter drips off spatula slowly but continuously.
  4. Pipe out macarons onto parchment paper lined baking sheet, then add sprinkles to upper halves of half of macarons. Tap baking sheet on counter to release air bubbles, then let sit for 30-45 minutes or until skin forms on outside of macarons (they should not stick to your finger when lightly touched). At this point, preheat your oven to 300 F while you wait for the skin to form.
  5. Bake for minutes, or until macarons remove cleanly from parchment paper.
  6. Fill with buttercream and add sugar pearl.

Buttercream Frosting Recipe

Ingredients

  • 1 cup softened butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 3-4 T milk

Directions

  1. Beat butter until smooth, then mix in powdered sugar one cup a time. Mix in vanilla extract, then add milk to reach desired consistency. Color frosting in desired colors.

Mermaid Freakshakes

Makes one 8 oz. milkshake

Ingredients

  • 1 T marshmallow fluff (optional)
  • Pink sanding sugar
  • 5 scoops of softened vanilla ice cream
  • 1/4 cup – 1/2 cup milk (depending on how soft ice cream is)
  • Gel food color in blue and purple
  • Decorations – colored Candiquik bark, sour candies, chocolate seashells, etc.

Directions

  1. Spread marshmallow fluff along rim of glass, then roll in pink sanding sugar. Chill glasses in the fridge until ready to use.
  2. Blend together ice cream, milk, and food color until smooth. Add more ice cream or milk as necessary to reach desired consistency. Pour into glasses and top with whipped cream and decorations!

Sand Dollar Cookies

Ingredients

  • Sugar cookie mix, prepared according to “cut-out” cookie directions
  • Sliced almonds
  • Cinnamon sugar (1/4 sugar + 1 T cinnamon)

Directions

  1. Preheat oven to 350 F. Line a baking sheet with parchment paper.
  2. Roll cookie dough into 1″ balls, then toss in cinnamon sugar. Flatten on baking sheet and press on five sliced almonds in a flower shape to mimic a sand dollar.
  3. Bake for 12-13 minutes.

How to Make Num Noms Cake Pops!

I’ve always wanted to make something Num Noms inspired, so I thought why not make some ice cream cone cake pops? Or I guess they should be called Oreo pops? Whatever you call them, hope you enjoy these cuties! 😀

Cake Pop/Oreo Truffle Ball Falling Off?

Here’s my theory on this: I’ve never had a problem with cake pop balls falling off the stick, but these Oreo truffles were a little trickier. I think it’s because the cream cheese has more fat in it, making the outside of the Oreo truffle ball a bit oilier than a typical cake pop ball. As a result, the Candiquik doesn’t grab onto the Oreo truffle as well as a cake ball. Nonetheless, I was able to dip all of the Oreo truffles without too much difficulty, but use cake pop balls if you want it to be a bit easier!

Instructions
  1. Place Oreos in food processor (including center cream) and pulse until fine crumbs form. Pour into a large bowl, then mix in 4 oz cream cheese. If mixture is too dry, add more cream cheese as necessary. Texture should be like cookie dough!
  2. Cut sugar cones to about 2" long. Roll out truffles into balls, then refrigerate for 5 minutes if truffles are soft.
  3. Dip tops of cones in Candiquik, then place a cake ball on top. Let set completely. Dip M&Ms in melted Candiquik, then attach to sides of cake balls. Dip entire cake pop in Candiquik, let set, then decorate!
