Pound Cake
  1. Preheat oven to 350 F. Grease two 9" x 5" loaf pans with cooking spray, then line with a parchment paper sling. Lightly spray with cooking spray to coat parchment.
  2. Cream together butter and sugar until light and fluffy. Add in eggs one at a time, beating after each addition. Mix in vanilla.
  3. Whisk together flour and baking powder. Alternate adding dry ingredients and milk to wet ingredients, beginning and ending with the flour.
  4. Divide between baking pans and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes, then remove from pan using the parchment sling.
  5. To assemble cake: Line the 9" x 5" tin with a parchment paper sling, then grease the sling with cooking spray. Pour in caramel mixture and smooth out with a spatula dipped in water. Let sit in the fridge until set. Remove from tin, then place on top of cake. With clean hands, mold the caramel to fit the cake if needed. Pour over the chocolate ganache, then smooth out with a spatula. Create a ripple design on top to mimic a candy bar with an offset spatula.
Caramel Mixture
  1. Melt caramel in the microwave at 30 second intervals until smooth. It will be sticky and hard to mix at first, so just keeping microwaving it until it's smooth.
  2. Mix in heavy cream one teaspoon at a time until caramel is smooth - depending on your caramel, you may not need all of it. Stir in peanuts
Chocolate Ganache
  1. Heat heavy whipping cream in the microwave until it begins to boil. Pour over chocolate chips and let sit for 3 minutes, then stir mixture through until it's smooth. It may look split/grainy at first, but just continue mixing and it will smooth out.
