Ingredients
- 1 3/4 cups flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 3 eggs, room temperature
- 1 cup strong black coffee (or 1 heaping tablespoon espresso powder dissolved in 1 cup water)
- 1 cup buttermilk (or 1 cup milk + 1 T white vinegar β let stand 5 minutes)
- 1/2 cup vegetable oil
- 1 tsp vanilla extract

Instructions
- Preheat oven to 350 degrees F. Grease giant cupcake pan with cooking spray.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, combine the eggs, buttermilk, vegetable oil, and vanilla extract. Add the wet ingredients to the dry and combine. Stir in the coffee. Batter will be thin.
- Divide batter between the two pans, then bake for 55-60 min.
