Hellooooo friends!! ? Today we are making some super tasty and adorable Pusheen brownie pop perfect for any cat-lover ? LOVE these as a substitute for cake pops too — you save lots of time since you don’t have to individually form each pop! YAY!

  1. Preheat oven to 350F.
  2. In a large microwave safe bowl, melt together butter and chocolate chips at 30 second intervals. Make sure to stir in between each interval.
  3. Add white sugar, vanilla, and salt to butter mixture. Stir to combine, then mix in eggs one at a time.
  4. Fold in flour and mix until just combined. Fill greased brownie pop mold with batter all the way to the tops of the mold and bake for 30 minutes or until a toothpick in the center comes out clean.
Royal Icing
  1. Whisk together meringue powder and powdered sugar until combined. Add in water 1 T at a time, beating with an electric mixer after each addition. Mix in black gel food color to achieve a dark gray. I found to get the perfect warm gray for Pusheen, it also helps to add in 1 drop of brown gel food color if you have it on hand.

Instructions
  1. Whisk together flour, baking powder, sugar, and salt. In a separate bowl, combine milk, egg, melted butter, and vanilla extract. Pour wet ingredients into dry, then mix just to combine. Lumps are fine!
  2. Spray a nonstick pan lightly with cooking spray, then preheat on low heat for 8 minutes. Spray metal cookie cutters/pancake mold generously with cooking spray, then place in pan. Scoop in pancake batter to fill mold until it reaches 1 cm away from top of mold. Add 1 tsp water, then cover and let steam for 15-20 minutes or until center no longer jiggles when pan is shaken. Carefully flip pancakes, then cover again and let steam for an additional 3-5 minutes. Remove from pan, let cool slightly, and gently remove from mold! Decorate as desired 🙂

  1. Preheat oven to 375 F and grease Madeleine mold generously with cooking spray.
  2. Beat eggs in a a large bowl until frothy. Slowly stream in sugar and mix until just combined, then mix in vanilla.
  3. Sift in flour and cocoa powder, then fold in gently. Pour in melted butter and stir to combine.
  4. Scoop heaping tablespoons of batter into Madeleine mold. Batter may be thickened significantly - don't worry, this is normal. Also, there is no need to smooth down the batter as it will spread out in oven. Bake for 10 minutes or until a toothpick inserted into the center comes out clean.
  5. Let cool in pan for 5 minutes, then flip out onto cooling rack. If madeleines do not immediately release from pan, gently nudge them out with a butter knife. Let cool completely, then dip halfway in white chocolate/Candiquik. Let set for 10 minutes, then decorate with royal icing.
Easy Royal Icing
  1. Whisk together powdered sugar and meringue powder, then mix in water one tablespoon at a time with an electric mixer. Continue adding water until desired consistency is reached (ideally a bit thicker than wet glue, and slightly too thick is better than slightly too thin). Color icing with food color and transfer to piping bags or Ziploc bags.
