Today we’re making a MINI Hello Kitty Cake using an Easy Bake Oven!

But what if I don’t have an Easy Bake Oven?

  • No worries! Here’s some options:
    • Bake the yellow cake recipe in a 4″ round cake pan. I would go for 350 F and about 8-10 minutes, but keep a close eye on it.

    • Make this a mug cake! Pour the batter into a microwave safe mug that’s been greased with cooking spray, then microwave for 2-3 minutes – you’ll definitely want to keep an eye on it though since I haven’t personally tried this method. Then let cool, remove from mug, cut into thin slices and then cut those thin slices with cookie cutters!

  1. Preheat Easy Bake Oven for 20 minutes.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt. Set aside
  3. In a separate bowl, melt together milk and butter in the microwave. Mix in vanilla, then pour mixture into dry ingredients and stir to combine. Add pink food color if desired.
  4. Pour half of batter into greased Easy Bake Oven pan, then bake for about 12 minutes. Repeat for a second cake, then let both cakes cool before decorating.

  1. Preheat oven to 350 degrees F. Grease cake pan with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and sugar. Mix in eggs, beating after each addition. Add in vanilla and combine. Alternate adding dry ingredients and milk, beginning and ending with the dry.
  4. Divide the batter between the cake pan wells, then bake for 25 min.
Buttercream Frosting
  1. Cream together butter and powdered sugar until light and fluffy, then mix in vanilla. Add milk to reach desired consistency. Color with gel food color.

  1. Place cookies and sprinkles into a food processor and process until crumbs. Add butter and blend until well combined. Pour mixture into 9" round springform pan, pressing onto the bottom and up the sides (about 2") evenly. Place in refrigerator to set.
  2. Using a hand mixer in a bowl, mix cream cheese, sugar, lemon juice and vanilla extract until smooth. Add sour cream and cake mix and keep mixing. Fold in whipped cream and sprinkles and then pour into pan. Spread evenly into crust and refrigerate 4 hours to set.
  3. To make the frosting, mix butter and powdered sugar until combined. Add heavy whipping cream, vanilla and salt and mix until smooth. Divide frosting into 3-5 colors and tint with food coloring.
  4. When ready to serve, take cheesecake out of the refrigerator and remove from springform pan. Place different colored frosting in piping bag and pipe frosting on top of cake. Garnish with more sprinkles.
