Japanese Fluffy Pancakes

Instructions
  1. Whisk together flour, baking powder, sugar, and salt. In a separate bowl, combine milk, egg, melted butter, and vanilla extract. Pour wet ingredients into dry, then mix just to combine. Lumps are fine!
  2. Spray a nonstick pan lightly with cooking spray, then preheat on low heat for 8 minutes. Spray metal cookie cutters/pancake mold generously with cooking spray, then place in pan. Scoop in pancake batter to fill mold until it reaches 1 cm away from top of mold. Add 1 tsp water, then cover and let steam for 15-20 minutes or until center no longer jiggles when pan is shaken. Carefully flip pancakes, then cover again and let steam for an additional 3-5 minutes. Remove from pan, let cool slightly, and gently remove from mold! Decorate as desired 🙂

Sugar Cookies
  1. Cream together butter and sugar until light and fluffy. Mix in egg yolk, sour cream, and vanilla until smooth. Add in flour, baking powder, and salt until combined. Bake all cookies at 350 F for 6-7 minutes.
Thin Mints
  1. For Thin Mints, mix in cocoa powder, peppermint extract, and milk. Dip baked cookies into melted chocolate.
Savannah Smiles
  1. For Savannah Smiles, mix in lemon zest and lemon juice. Add flour if necessary. Toss in powdered sugar while cookies are still warm.
Tagalongs
  1. Pipe peanut butter onto baked sugar cookie, then dip in melted chocolate.
Samoas
  1. Dip bottom of Samoas in melted chocolate. Melt caramel and milk in microwave at 20 second intervals until melted and smooth. Mix in coconut, then pipe onto sugar cookies.

Instructions
  1. Preheat oven to 350F. Grease two 6" baking pans w/ cooking spray, line with parchment, and grease again. For remaining batter, you can either bake another 6" cake or bake about 12 cupcakes.
  2. Whisk together flour, baking powder, salt, and cocoa powder. Set aside.
  3. In the bowl of a stand mixer, cream together butter, shortening, and sugar until light and fluffy. Add in eggs one at a time, then mix in vanilla extract.
  4. Alternate adding dry ingredients and milk, beginning and ending with the dry ingredients. Mix only until mixture just comes together. Divide between pans (fill pans 7/8 full), then bake for 1 hour. Bake cupcakes for about 20-25 minutes.
  5. Let cool for 10 minutes, then remove from pans.
